Brief History:
The members in my family are 5 and we have origins from a small
mountain town of Calabria and lived at Scalea, a seaside town on the Southern
Italian coast.
After several years of managing restaurants in Italy, my family
and I moved to England, in 1996, and opened an Italian Restaurant in Southend
on Sea. That is when I was first introduced to the restaurant business: I
helped my parents out in the kitchen and at the same time practiced and
improved what I learned at school. In 1999 we moved to Italy where I took Chef
qualifications on a three year course.
Work Experience:

2002 (May –
Oct):
Full-time Chef in our family managed Hotel/Restaurant “Riviera dei Cedri” in
southern Italy catering in high season up to 200 covers. I was also in charge
of the Pizzeria, making around 100 pizzas per evening; of 2 kitchen
assistants, 2 kitchen cleaners and 2 pizzeria assistants.

2002 Apr –
2001 Nov:
Full-time Chef; also in charge of the pizzeria and 2 kitchen
assistants and 1 kitchen cleaner at “Riviera dei Cedri”.

2001 (May –
Oct):
Full-time assistant to Chef catering, at “Riviera dei Cedri”,
up to 200 covers in high season for restaurant and up to 100 pizzas per
evening.

2001 Apr –
2000 Nov:
Part-time
assistant to Chef and assistant to pizzeria at “Riviera dei Cedri”.
Objectives:
I want to pursue the Chef occupation improving my skills and my
menu, catering for great restaurants and/or hotels.
